Recipe of the Month: Cajun Oven Fried Chicken

Servings: 4

Ingredients:

  • cooking spray
  • 1/3 cup unseasoned bread crumbs
  • 1 teaspoon Mrs. Dash extra spicy herb seasoning
  • 1/4 teaspoon cumin
  • 1 teaspoon garlic powder
  • water to moisten chicken
  • 1 pound skinless chicken breasts cut into 4 servings

 Preparation: 

  1. Spray a nonstick baking pan with cooking spray. Preheat oven to 350 degrees.
  2. Mix bread crumbs, Mrs. Dash herb seasoning, cumin, and garlic powder in a small bowl.
  3. Dip chicken in water to moisten and then into bread crumb mixture.  Press crumbs to adhere to chicken.
  4. Place chicken on a baking pan and pat on any remaining crumbs.
  5. Bake at 350 F until thoroughly cooked, 25 to 30 minutes.
