Cooking Method Key to Potatoes' Potassium

According to a study in the Journal of Food Science, cubing or shredding potatoes before boiling them can cut down on the amount of potassium in the vegetable.
 
Researchers found soaking cubed potatoes by soaking them in water for hours does little to lower the potassium level. However, boiling cubed potatoes cut the potassium levels in half and boiling shredded potatoes lowered the potassium content by 75 percent.
