Tip of the Month: Reduce Potassium in Potatoes

To reduce potassium content in potatoes, peel the potatoes, cut them into small pieces, and cover them with water and let them sit for several hours or overnight. Next, drain and discard the old water and cook the potatoes in fresh water or as desired.
