Serving Size: One burrito
Ingredients:
- 1 pound lean ground beef
- Non-stick cooking spray
- 1/4 cup chopped onions
- 1/4 cup chopped green peppers
- 1/4 cup low sodium tomato sauce
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin
- 6 flour tortillas
Preparation: 1. In a medium skillet, brown ground beef; drain on paper towels. 2. Spray skillet with non-stick cooking spray; add onions and green pepper and cook for 3 to 5 minutes, until vegetables are softened. 3. Add beef, tomato puree, black pepper and cumin to onion/pepper mixture; mix well and cook for 3 to 5 minutes on low heat. 4. Divide beef among tortillas. Roll the tortilla over burrito style, making sure the ends are folded first so the mixture does not fall out.
