Recipe of the Month: Marshmallow Popcorn Balls

Ingredients:

  • 12 cups popped popcorn
  • 6 Tbsp. unsalted butter
  • 3 cups tiny marshmallows
  • 1/2 of a 3 oz. package of raspberry flavored gelatin (or any of your favorite flavors)

Directions: Keep popcorn warm in a 225 degree oven. Melt the butter and marshmallows over medium heat. Stir until completely melted. Blend in gelatin. Pour over popcorn. With buttered hands, form into balls.

Nutrient Analysis Per Serving (1 ball): 171 calories; 0 grams protein; 9 milligrams sodium; 4 milligrams potassium; 16 milligrams phosphorous
